Fish Frying 101

Creating the ultimate fish lunch is easy if you just follow a few simply rules

1. The best fish fries always start with high quality fresh fish fillets

2. Clean the fillets by removing any dark fatty areas and then carefully check the fillets for any remaining bones that may have been missed

3.  Use a quality breading or batter, (preferably Lily River products) rinse the fillets with cold water and shake off excess moisture. Evenly coat the fillets with breading or batter immediately before frying. (Pre-coating can allow salt and spices to absorb into the fillet)

4. Preheat your frying oil to 350 degrees. Keeping your cooking oil between 330 to 360 degrees is the most important step in the frying process.

5. Insert your coated fillets into the hot oil and fry until crisp. Never overload your fryer as this will cause the cooking oil to cool down and your fillets will not crisp up. Depending on thickness, fish does not take long to cook. Most people have a tendency to over cook.
